You have to block it off in 3 places, intake, head and exhaust/header. You may have to lean out the carb a little pending on how its jetted.

I just capped off my EGR at the 3/4" fitting where I removed the pipe that goes into the intake manifold. I put a cap on the vacume fitting that stubs out of the valve. The only problem I ever had was when the cap blew off the EGR valve when I had a minor backfire while tuning the carb and timing. All of my old piping on the manifold and the back of the head remains until I get a header.

With fuel injection, you can really mess things up by removing too much (ie the EGR system).

I wouldn't remove anything. I would probably hide some things to clean it up a bit, but the way that most everything is tied into or affects the readings that the computer recieves, removing some things can adversly affect the performance of your motor. Every one of those little vacume lines has a purpose, usually relaying information (vac. pressure, air pressure...) to a sensor or a switch that in turn sends info. to the computer, which regulates everything to make the engine run to it's best potential. If you want to remove everything, get a carb and strip everything. A carb is a relatively simple device compared to a computerized fuel injection motor. But you do lose mileage, and efficiency.
